Here in WV it is the ramp. A wild onion/leek type vegetable that comes up in the early spring, sometimes even through the snow in higher elevations. Very flavorful and pungent it is eaten alone raw, cut up in salads or fried and eaten as a side or mixed in with potatoes, cabbage or various other vegetables. Also great with bacon and cornbread. Yum!!! Many communities feature ramp dinners during the spring months and folklore has it when you consume them with a glass of sassafras tea it becomes a spring tonic that will cure whatever ails ya. Be forewarned, if you are going to be around people who have eaten ramps it is a good idea to eat a few for yourself. It will lessen the impact. Remember, I did say they were pungent.
